Why This Works
This pizza is all about contrast:
-
Black Garlic Paste → sweet, rich, umami
-
Figs → soft, natural sweetness
-
Prosciutto → salty, delicate
-
Gorgonzola (optional) → bold, creamy, slightly funky
-
Rocket → fresh, peppery lift
Together, they create a perfectly balanced, restaurant-quality pizza at home.
Pro Tip
If using Gorgonzola, use slightly less than goat’s cheese — its flavour is more intense and beautifully complements the black garlic without overpowering it.
