Ingredients

1–2 dozen fresh oysters, shucked

1 dessertspoon Noosa Black Garlic Caramelized Black Garlic Paste

⅓ cup tomato relish

2 tbsp Worcestershire sauce

¼ cup French shallot or red onion, finely chopped

¼ cup pancetta, finely chopped

½ tsp smoked paprika
-
¼ tsp white pepper
-
¼ tsp salt

Rock salt, for serving presentation
Method
1. Prepare the Kilpatrick topping
In a bowl, combine:

Mix well until evenly combined.
2. Cook the oysters
Preheat your oven, grill or BBQ to 180°C.
Place the freshly shucked oysters onto an oyster tray or baking tray.
Spoon a generous dessertspoon of the Kilpatrick mixture over each oyster.
Cook for 5–10 minutes, until the topping becomes lightly browned and aromatic.
3. Plate and serve
Cover a serving platter with rock salt to stabilise the oyster shells.
Arrange the oysters evenly across the platter and serve immediately while hot.
