Ingredients

2 tbsp Noosa Black Garlic Caramelized Black Garlic Paste

6 ripe tomatoes (we love local Noosa Reds)

1 tub bocconcini, drained

1 bunch fresh basil
-
1–2 tbsp extra virgin olive oil

Sea salt and freshly cracked black pepper
Method
1. Slice the tomatoes
Slice the tomatoes into even rounds and arrange them across a large serving plate.
2. Add the bocconcini
Drain the bocconcini and slice each piece in half lengthways.
Arrange the cheese evenly over the tomato slices.
3. Add the basil
Remove the basil leaves from the stems and scatter generously over the salad.
4. Dress the salad
Drizzle the salad with extra virgin olive oil.
Season lightly with sea salt and freshly cracked black pepper.
5. Finish with black garlic
Drizzle the Noosa Black Garlic Caramelised Black Garlic Paste liberally across the salad.
