A Festive Glazed Ham with Noosa Black Garlic Honey
This Macadamia Crust Baked Ham with Orange, Thyme & Black Garlic Honey is a spectacular centrepiece for festive entertaining.
A beautifully glazed ham is coated in a rich citrus and thyme glaze made with Noosa Black Garlic Honey, then finished with a crunchy Australian macadamia nut crust that becomes golden and caramelised in the oven.
The result is a perfect balance of sweet citrus, savoury herbs and deep black garlic umami, creating a show-stopping ham that’s ideal for Christmas, celebrations, long lunches or holiday entertaining.

Ingredients

1 tsp finely grated orange zest

¾ cup fresh orange juice

¼ cup brown sugar

1 bunch fresh thyme

⅔ cup Noosa Black Garlic Honey

1 small to medium cooked or smoked leg ham

1¾ cups (250 g) macadamia nuts, roughly chopped
Method
1. Prepare the orange and black garlic glaze
In a small saucepan, combine:

fresh orange juice

brown sugar

half of the Noosa Black Garlic Honey
Place over medium heat and stir until the sugar dissolves and the glaze becomes slightly thick and syrupy.
Remove from heat and allow to cool slightly.
2. Prepare the ham
Preheat your oven to 180°C (350°F).
Using a sharp knife, carefully remove the rind from the ham.
Score the fat in a diamond (criss-cross) pattern, being careful not to cut too deeply into the meat.
3. Glaze the ham
Place the ham on a wire rack in a large roasting dish lined with foil or baking paper.
Brush the ham generously with the prepared glaze, ensuring the surface is evenly coated.
4. Bake and baste
Roast the ham for 40 minutes, basting with the remaining glaze every 10–15 minutes.
The glaze will begin to caramelise and develop a rich golden colour.
5. Add the macadamia crust
Brush the ham with the remaining Noosa Black Garlic Honey.
Press the chopped macadamia nuts evenly over the glazed surface to create a crunchy crust.
Return the ham to the oven and bake for a further 30–40 minutes, until the macadamias are golden and toasted.
6. Rest and carve
Remove the ham from the oven and allow it to rest for 15 minutes before carving.
This helps the juices settle and makes slicing easier.
