Smashed Avocado, Whipped Goat’s Cheese & Blistered Tomatoes with Black Garlic Salt

A Noosa Black Garlic twist on the classic smashed avocado brunch. Creamy avocado and tangy whipped goat’s cheese are layered over golden sourdough, topped with sweet blistered cherry tomatoes and finished generously with our black garlic-infused sea salt.

Fresh, vibrant and ready in just 15 minutes, it’s an effortless café-style breakfast or light lunch that’s equally impressive served for a relaxed weekend brunch.

Ingredients

For the Blistered Tomatoes

  • 200g cherry tomatoes
  • 1 tbsp olive oil
  • Pinch of sea salt

For the Whipped Goat’s Cheese

  • 100g soft goat’s cheese
  • 1 tbsp extra virgin olive oil

For the Smashed Avocado

  • 2 ripe avocados
  • Juice of ½ lemon
  • Pinch of sea salt

For the Toast

  • 4 thick slices sourdough
  • Butter

To Finish

  • 1½ tsp Noosa Black Garlic - Black Garlic Salt, or to taste
  • 1 tbsp finely chopped fresh chives or micro herbs (optional)
  • ⅓ tsp chilli flakes (optional)

Method

Step 1: Blister the Tomatoes

Heat a frying pan over medium-high heat.

Add the cherry tomatoes and olive oil, then season with a small pinch of sea salt. Cook for 4–5 minutes, shaking the pan occasionally, until the tomatoes are softened and their skins are blistered and beginning to split.

Step 2: Whip the Goat’s Cheese

While the tomatoes are cooking, place the goat’s cheese and extra virgin olive oil in a small bowl.

Whip together with a fork or small whisk until smooth, creamy and spreadable.

Step 3: Smash the Avocado

Place the avocado flesh in a bowl and add the lemon juice and a small pinch of sea salt.

Roughly mash with a fork, keeping some texture rather than making the avocado completely smooth.

Step 4: Toast the Sourdough

Toast the sourdough until golden and crisp.

While the toast is still warm, lightly spread with a thin layer of butter.

Step 5: Assemble

Spread the whipped goat’s cheese generously over each slice of sourdough.

Top with the smashed avocado, followed by the blistered tomatoes and a spoonful of their warm pan juices.

Step 6: Finish and Serve

Finish generously with Noosa Black Garlic Salt.

Scatter over the fresh chives or micro herbs and chilli flakes, if using. Serve immediately while the tomatoes are still warm.
