A Simple Gourmet Toast Featuring Noosa Black Garlic

Sometimes the simplest recipes are the most memorable.

This elegant Prosciutto & Black Garlic Toast brings together just a handful of premium ingredients - crisp sourdough, ripe tomatoes, silky prosciutto and the rich umami depth of Noosa Black Garlic Cloves.

Originally created by leading Melbourne chef Andrew McConnell and featured by Delicious Magazine Australia, this recipe is a beautiful example of letting quality produce shine.

The black garlic is gently rubbed onto warm toasted bread, melting into the surface and delivering a subtle sweetness that perfectly balances the saltiness of prosciutto and the freshness of tomato.

Recipe Details

Serves: 4
Prep time: 10 minutes
Cook time: 5 minutes

Ingredients

  • 8 slices sourdough bread (approx. 1.5 cm thick)

  • 2–3 Noosa Black Garlic Cloves, halved

  • 2 very ripe tomatoes, halved

  • Extra virgin olive oil, for drizzling

  • 300 g thinly sliced prosciutto

Method

1. Grill the bread

Heat a BBQ or chargrill pan over medium-high heat.

Grill the sourdough slices for 2 minutes each side, until lightly charred and crisp.

2. Infuse with black garlic and tomato

While the bread is still warm, rub each slice with the cut side of the Noosa Black Garlic Cloves.

Then rub with the cut side of the tomatoes, gently squeezing to release their juices into the bread.

3. Finish and assemble

Drizzle with extra virgin olive oil.

Top generously with slices of prosciutto.

Serve

Serve immediately while the toast is warm and crisp.

Why Black Garlic Works in This Dish

Noosa Black Garlic Cloves add a gentle sweetness and deep umami flavour that enhances the natural acidity of tomato and the richness of prosciutto.

Rather than overpowering the dish, it subtly elevates every bite — proving that great ingredients don’t need to be complicated.
