Tender Roast Turkey with Rich Noosa Black Garlic Gravy

A rolled turkey breast is roasted with butter, thyme, onions and Noosa Black Garlic Cloves, creating beautifully succulent meat with rich pan flavours. It’s served with a thick, creamy Black Garlic Cornbread Gravy, blended with cornbread and Noosa Black Garlic Caramelized Black Garlic Paste for deep umami richness.

Ingredients
Roast Turkey

¼ cup (60 ml) olive oil

1.5 kg boned turkey breast, rolled and tied

200 g unsalted butter

8 thyme sprigs

2 Noosa Black Garlic Cloves, finely chopped

2 red onions, thinly sliced
Black Garlic Cornbread Gravy
-
1 L (4 cups) milk
-
3 corn cobs, grilled over the BBQ

½ Cornbread with Pancetta, Jalapeño, Chives & Caramelized Black Garlic Paste (from the previous recipe), crumbled

1 tbsp Noosa Black Garlic Caramelized Black Garlic Paste

Remaining thyme sprigs
-
Remaining 50 g butter
Method
1. Brown the turkey
Preheat your oven to 180°C.
Heat 2 tablespoons olive oil in a large casserole dish over medium heat.
Place the turkey breast skin-side down and cook for 5–6 minutes, until the skin is golden and crisp.
Turn the turkey over and add:

2. Roast the turkey
Transfer the casserole dish to the oven.
Roast for 45 minutes, basting the turkey with the pan juices every 15 minutes, until cooked through and tender.
Remove from the oven and allow the turkey to rest for 10 minutes, loosely covered with foil.
Make the Black Garlic Cornbread Gravy
1. Infuse the milk
In a saucepan over medium heat, combine the milk and remaining thyme sprigs.
Bring to a gentle simmer.
Add the crumbled cornbread and stir continuously for about 4 minutes, until the mixture thickens.
2. Blend until smooth
Transfer the mixture to a blender or food processor.
Add:

Blend until smooth and creamy.
3. Finish the gravy
Season to taste.
Strain the gravy through a fine sieve for a silky finish.
Drizzle a little extra Caramelised Black Garlic Paste over the surface and gently marble with a spoon.
Serve
Slice the roasted turkey and arrange on a serving platter.
