Black Garlic Chicken Parmigiana with Prosciutto, Avocado & Mozzarella

Juicy, savoury and completely irresistible, The Umami Parmi is a next-level take on the classic chicken parmigiana — elevated with the rich depth of Noosa Black Garlic.

Crispy golden schnitzel is layered with Caramelised Black Garlic Paste, delicate prosciutto, creamy avocado and bubbling mozzarella, then finished with a generous dollop of Noosa Black Garlic Aioli.

The result is a bold, flavour-packed chicken parmi that delivers an unforgettable umami hit in every bite.

Ingredients

  • 2 chicken breasts

  • 2 eggs

  • 50 ml cream

  • 1 cup plain flour

  • 1 cup panko breadcrumbs

  • 4 tsp Noosa Black Garlic Caramelized Black Garlic Paste

  • 1 avocado, sliced

  • 4 slices prosciutto

  • 1 cup shredded mozzarella

  • Noosa Black Garlic Black Garlic Aioli, to serve

  • Rice bran oil, for frying


Method

1. Preheat the oven

Preheat your oven to 180°C (350°F).

Heat rice bran oil in a deep frying pan over medium heat.


2. Prepare the chicken schnitzels

Place the chicken breasts between two sheets of baking paper and gently flatten using a rolling pin or meat mallet until evenly thin.

Prepare three bowls:

  • Bowl 1: plain flour

  • Bowl 2: eggs whisked with cream

  • Bowl 3: panko breadcrumbs

Coat each chicken breast in flour → egg mixture → panko crumbs, ensuring an even coating.


3. Fry the schnitzels

Carefully place the schnitzels into the hot oil.

Cook until golden and crisp, turning once.

Remove and place onto a lined baking tray.


4. Add the black garlic layer

Brush each schnitzel generously with 2 teaspoons of Noosa Black Garlic Caramelised Black Garlic Paste.

Top each with two slices of prosciutto.

Place in the oven for 10 minutes.


5. Build the parmi

Remove the schnitzels from the oven.

Layer with sliced avocado and finish with a generous handful of shredded mozzarella.


6. Bake until bubbling

Return to the oven for 5 minutes, or until the cheese is melted, bubbly and lightly golden.


7. Serve

Serve hot with:

  • crisp slaw (apple slaw works beautifully)

  • a generous dollop of Noosa Black Garlic Aioli
