This Black Garlic & Prosciutto Baked Brie is one of those dishes that stops people mid-conversation — warm, molten cheese wrapped in delicate ribbons of prosciutto, with a rich, sweet umami centre of Noosa Black Garlic Caramelized Paste.

It’s indulgent, effortless, and designed for sharing. The kind of dish that belongs at the centre of the table, surrounded by good wine and even better company.

Ingredients

  • 1 wheel Brie (200–300 g)

  • 1–2 tbsp Noosa Black Garlic - Caramelized Black Garlic Paste

  • 4–6 slices prosciutto

  • Fresh thyme leaves (optional)

  • Freshly cracked black pepper

  • Crackers or crusty bread, to serve


Method

1. Prepare the brie

Preheat oven to 180°C.

Using a sharp knife, carefully slice the brie horizontally through the centre to create two even halves.


2. Add the black garlic

Spread a generous layer of Noosa Black Garlic Caramelized Paste over the base half of the brie.

Gently place the top half back on, creating a hidden layer of rich, sweet umami inside.


3. Wrap with prosciutto

Wrap the brie with slices of prosciutto, allowing them to naturally drape and overlap.

4. Bake

Place into a small baking dish and bake for 10–15 minutes, or until:

  • the brie is soft and molten inside

  • the prosciutto is slightly crisp on the edges


Serve

  • cracked black pepper

Serve immediately with:

  • crusty sourdough

  • artisan crackers

  • or warm baguette slices
