These Black Garlic, Bacon & Cheese Hot Cross Buns take a classic and elevate it with the rich, sweet umami of Noosa Black Garlic Caramelized Paste folded through the dough, then finished with a luxurious black garlic butter.
Packed with crispy bacon, sharp cheddar and creamy Dutch-style goat’s cheese, these buns are deeply savoury, beautifully aromatic and irresistibly moreish.

Ingredients
Dough

500 g bread flour
-
7 g (1 sachet) dry yeast
-
1 tbsp caster sugar
-
1 tsp salt
-
250 ml warm milk
-
1 egg
-
50 g butter, melted
-
2 tbsp Noosa Black Garlic Caramelized Black Garlic Paste
Fillings
-
200 g streaky bacon, cooked and chopped
-
1 cup cheddar cheese, grated
-
½ cup Dutch-style goat’s cheese, grated or crumbled
-
2 tbsp chives, finely chopped
-
Freshly cracked black pepper
Cross Mixture
-
½ cup plain flour
-
Water, to form a smooth paste
Black Garlic Butter
-
100 g butter, softened
-
1–2 cloves Noosa Black Garlic Cloves

Pinch sea salt
Method
1. Activate the yeast
In a bowl, combine warm milk, sugar and yeast.
Set aside for 5–10 minutes until foamy.
2. Make the dough
In a large bowl or stand mixer, combine:

melted butter

Mix and knead until smooth and elastic (8–10 minutes).
(The dough should be soft and slightly sticky.)
3. First prove
Place dough in a lightly oiled bowl, cover, and leave in a warm place for ~1 hour, or until doubled in size.
4. Add fillings & shape
Punch down the dough and gently knead through:

Divide into 12 equal portions and roll into smooth balls.
Place into a lined baking tray, slightly touching.
5. Second prove
Cover and allow to rise again for 30–40 minutes, until puffy.
6. Pipe the crosses
Mix flour and water into a thick paste.
Pipe crosses over each bun.
7. Bake
Preheat oven to 180°C.
Bake for 20–25 minutes, until golden and cooked through.
8. Finish with black garlic butter
While still warm, brush generously with black garlic butter.
Serve
Serve warm, split open and enjoy as is — or take it further with:
