Crispy Prawn Cracker Prawns with Black Garlic Salt & Black Garlic Aioli

These Crispy Prawn Cracker Prawns are the ultimate crowd-pleaser — juicy prawns wrapped in an airy, delicate prawn cracker coating, fried until golden and finished with a sprinkle of Noosa Black Garlic Salt.

Served with a silky Black Garlic Aioli, this dish delivers the perfect balance of crunch, sweetness and deep umami.

Ingredients

Prawn Cracker Prawns

  • 500 g raw king prawns, peeled (tails on)
  • ½ cup plain flour
  • 2 eggs, lightly beaten
  • 2 cups prawn crackers, crushed into a fine crumb
  • Oil, for frying (rice bran or vegetable oil)
  • Noosa Black Garlic Salt, to finish
  • Fresh lime wedges, to serve
  • Noosa Black Garlic Aioli

Black Garlic Aioli - (if you want to make it from scratch)


Method

1. Prepare the prawns

Pat the prawns dry with paper towel.

Set up a crumbing station with:

  • flour
  • beaten eggs
  • crushed prawn crackers

2. Coat the prawns

Dust each prawn lightly in flour, shaking off excess.

Dip into the egg mixture, then press firmly into the prawn cracker crumb until fully coated.

Place onto a tray and repeat with remaining prawns.


3. Fry until golden

Heat oil in a deep pan to 180°C.

Fry the prawns in batches for 2–3 minutes, until puffed, golden and crispy.

Remove and drain on paper towel.


4. Season

While still hot, sprinkle generously with Noosa Black Garlic Salt.


5. Make the black garlic aioli

In a blender or using a stick blender, combine:

  • egg yolks
  • Dijon mustard
  • lemon juice
  • salt

Slowly drizzle in the oils while blending until thick and emulsified.

Add the Noosa Black Garlic Cloves and blend until smooth and silky.


Serve

Pile the prawns onto a serving platter and serve immediately with:

  • black garlic aioli
  • lime wedges

Optional garnish:

  • finely sliced spring onion
  • red chilli slices
  • fresh herbs
