Black Garlic & Vanilla Bean Panna Cotta

A Silky Gourmet Dessert with Noosa Black Garlic

Elegant, silky and surprisingly complex, this Black Garlic & Vanilla Bean Panna Cotta is a refined twist on the classic Italian dessert.

Creamy panna cotta is infused with vanilla bean and Noosa Black Garlic Caramelised Black Garlic Paste, creating a beautifully balanced flavour profile. The gentle sweetness of the cream and sugar pairs perfectly with the subtle caramel and umami notes of black garlic.

Finished with fresh raspberries and mint, this dessert is light, sophisticated and unforgettable — perfect for dinner parties or special occasions.

Ingredients

  • 375 ml milk

  • 375 ml cream

  • 75 g caster sugar

  • 1 tsp Noosa Black Garlic Caramelized Black Garlic Paste 

  • 1 tsp vanilla bean paste

  • 15 g gelatine sheets

  • Fresh raspberries, to serve

  • Fresh mint leaves, to serve


Method

1. Prepare the gelatine

Place the gelatine sheets in a bowl and cover with cool water.

Allow them to soften for 5–10 minutes.


2. Heat the panna cotta base

In a saucepan over medium heat, combine the milk, cream, caster sugar and vanilla bean paste.

Bring the mixture just to the boil, stirring occasionally.

Remove from the heat.


3. Add the black garlic

Stir in the Noosa Black Garlic Caramelised Black Garlic Paste.

Squeeze excess water from the softened gelatine sheets and add them to the warm cream mixture.

Stir until the gelatine is completely dissolved.


4. Set the panna cotta

Pour the mixture into panna cotta moulds or small serving glasses.

Refrigerate overnight, or until fully set.


5. Unmould and serve

To remove the panna cotta from the mould:

  1. Run a small spatula around the edges.

  2. Dip the base of the mould into hot water for 5–10 seconds.

  3. Place a serving plate over the mould and gently invert.

Serve with fresh raspberries and mint leaves.

  • roasted stone fruit

  • dark chocolate shards

  • almond biscotti
