Ingredients
- 6 chicken thighs (bone-in, skin-on for best flavour)
- 500–700 g baby potatoes, halved
- 1 brown onion, cut into wedges
- 4 cloves garlic, lightly crushed
- 1 tbsp olive oil
- 20 g butter
- 1½ tbsp Noosa Black Garlic - Caramelized Black Garlic Paste
- 250 ml pouring cream
- ½ cup chicken stock
- 1 tbsp Dijon mustard
- 6–8 fresh sage leaves
- Salt & freshly cracked black pepper
Method
1. Preheat
Preheat your oven to 200°C (fan-forced 180°C).
2. Build the tray
In a large baking tray, combine:
- potatoes
- onion
- garlic
Drizzle with olive oil, season well, and toss to coat.
Place chicken on top, skin-side up. Dot with butter.
3. Roast
Roast for 25–30 minutes, until:
- chicken skin is golden
- potatoes are starting to crisp
4. Make the black garlic cream
In a jug, whisk together:
- cream
- chicken stock
- Dijon mustard
- Noosa Black Garlic Caramelized Paste
5. Add sauce & sage
Remove tray from oven.
Pour the black garlic cream around the chicken (not over the skin to keep it crispy).
Scatter over fresh sage leaves.
6. Finish baking
Return to oven for 15–20 minutes, until:
- chicken is cooked through
- sauce is bubbling and slightly thickened
- potatoes are golden and tender
Serve
Serve straight from the tray with:
- crusty bread
- or a simple green salad
