Ingredients

4 slices sourdough bread

2 tbsp Noosa Black Garlic - Caramelized Black Garlic Paste

250 g mixed mushrooms (button, Swiss brown, oyster or shiitake), sliced
-
1 tbsp butter
-
1 tbsp extra virgin olive oil
-
1 small brown onion, finely sliced
-
1–1½ cups cheese, grated or sliced
(Gruyère, Swiss, cheddar, or a mix) -
Fresh thyme leaves

Salt & freshly cracked black pepper
Method
1. Caramelize the mushrooms
Heat butter and olive oil in a pan over medium heat.
Add the onion and cook until soft and lightly golden. Add the mushrooms and cook until:

deeply caramelized

golden
-
reduced in size
Season with salt, pepper and fresh thyme.
(Don’t rush this step — this is where the magic happens.)
2. Build the toastie
Lay out your sourdough slices.
Spread a generous layer of Noosa Black Garlic Caramelized Black Garlic Paste on the inside of each slice.
Layer:

3. Toast to perfection
