Ingredients

  • 4 slices sourdough bread

  • 2 tbsp Noosa Black Garlic - Caramelized Black Garlic Paste

  • 250 g mixed mushrooms (button, Swiss brown, oyster or shiitake), sliced

  • 1 tbsp butter

  • 1 tbsp extra virgin olive oil

  • 1 small brown onion, finely sliced

  • 1–1½ cups cheese, grated or sliced
    (Gruyère, Swiss, cheddar, or a mix)

  • Fresh thyme leaves

  • Salt & freshly cracked black pepper


Method

1. Caramelize the mushrooms

Heat butter and olive oil in a pan over medium heat.

Add the onion and cook until soft and lightly golden. Add the mushrooms and cook until:

  • deeply caramelized

  • golden

  • reduced in size

Season with salt, pepper and fresh thyme.

(Don’t rush this step — this is where the magic happens.)


2. Build the toastie

Lay out your sourdough slices.

Spread a generous layer of Noosa Black Garlic Caramelized Black Garlic Paste on the inside of each slice.

Layer:

  • cheese

  • caramelised mushrooms

  • more cheese (always more cheese)

Top with the second slice of bread.


3. Toast to perfection

Heat a pan or sandwich press over medium heat.

Cook the toasties until:

  • golden and crisp on the outside

  • perfectly melted on the inside

(Press gently with a spatula for that perfect crunch.)


Serve
