A Festive Ham with Noosa Black Garlic

A beautifully glazed ham is the centrepiece of many celebrations — and this Smoked Ham with Black Garlic Honey & Spiced Brown Sugar Glaze takes it to another level.

Slow-smoked (or gently oven baked) ham is coated in a rich glaze made from Noosa Black Garlic Caramelised Black Garlic Paste, Black Garlic Honey, Dijon mustard and warm Chinese five spice. As the ham cooks, the glaze caramelises to create a glossy, deeply savoury crust with subtle sweetness and aromatic spice.

The result is a ham that’s juicy, sticky, fragrant and full of umami flavour — perfect for Christmas, Easter or special family feasts.

Ingredients


Method

1. Prepare the smoker or oven

Preheat your smoker to a low temperature (around 100–120°C).

If using an oven instead, preheat to 100–120°C for a slow baked version.


2. Make the black garlic glaze

In a small saucepan combine:

  • Noosa Black Garlic Caramelised Black Garlic Paste

  • Noosa Black Garlic Honey

  • butter

  • brown sugar

  • Dijon mustard

  • Chinese five spice

Heat gently until the butter melts and the mixture becomes smooth and glossy.

Remove from the heat.


3. Prepare the ham

Place the ham onto a roasting rack or trivet in a roasting dish.

Remove the skin from the ham and score the fat in a diamond pattern.


4. Glaze the ham

Using a basting brush, coat the ham generously with the glaze.


5. Smoke or bake the ham

Place the ham into the smoker or oven.

Cook for approximately 3 hours, basting every 15–20 minutes so the glaze builds up into a rich caramelised crust.

The ham is ready when it develops a deep golden colour and glossy glaze.


6. Rest and carve

Remove the ham from the smoker or oven and allow it to rest for 10–15 minutes.

Carve into slices and serve warm.
