A Simple Gourmet Side Dish with Noosa Black Garlic

Fresh, vibrant and full of flavour, this Grilled Asparagus with Prosciutto, Pine Nuts and Parmesan is an elegant side dish that comes together in minutes.

Tender asparagus spears are wrapped in delicate prosciutto, grilled until lightly charred, then finished with toasted pine nuts, shaved Parmesan and a generous drizzle of Noosa Black Garlic Extra Virgin Olive Oil.

The result is a beautiful balance of salty, nutty and savoury flavours, with the black garlic oil adding a subtle umami richness that elevates the entire dish.

Perfect as a side for grilled meats, seafood or festive entertaining.

Ingredients

  • 2 bunches asparagus spears, trimmed

  • 12 slices prosciutto

  • ½ cup shaved Parmesan (or another sharp hard cheese)

  • ¼ cup pine nuts, toasted

  • 2–4 tbsp Noosa Black Garlic Extra Virgin Olive Oil

Optional seasoning:

  • freshly cracked black pepper


Method

1. Preheat the grill

Heat a BBQ or grill pan to medium-high heat.


2. Wrap the asparagus

Wrap each asparagus spear with a slice of prosciutto, spiralling the ham along the length of the spear.

Lightly drizzle the wrapped asparagus with Noosa Black Garlic Extra Virgin Olive Oil.


3. Grill the asparagus

Place the asparagus on the hot grill and cook for 3–5 minutes, turning occasionally, until lightly charred with beautiful grill marks and the asparagus is just tender.

Remove from the grill.


4. Finish the dish

Arrange the grilled asparagus on a serving platter.

Sprinkle over the shaved Parmesan and toasted pine nuts.

Drizzle generously with the remaining Noosa Black Garlic Extra Virgin Olive Oil.


Serve

Serve immediately while warm.

The saltiness of the prosciutto and Parmesan usually provides enough seasoning, but you can finish with a little freshly cracked black pepper if desired.
