Ingredients

250–300 g fresh buffalo cheese (or feta, goat’s cheese or ricotta)

Noosa Black Garlic Honey, for drizzling

100 g macadamia nuts

Fresh thyme leaves

Baguette, sliced and toasted
Method
1. Whip the cheese
Place the cheese into a mixing bowl.
Using a stand mixer or electric beaters, whisk on high speed until the cheese becomes light, smooth and fluffy.
2. Toast the macadamias
Roughly crush the macadamia nuts using a pestle and mortar or rolling pin.
Heat a frying pan over medium heat and toast the nuts until lightly golden and fragrant.
Set aside to cool.
3. Assemble the dish
Spread the whipped cheese onto a serving plate or shallow bowl.
Use the back of a spoon or spatula to create soft swirls across the surface.
4. Add the toppings
Drizzle generously with Noosa Black Garlic Honey.
Scatter over the toasted macadamias and fresh thyme leaves.
5. Serve
Serve immediately with toasted baguette slices for scooping.
