Creamy whipped cheese has become one of the most popular entertaining dishes — and for good reason. Light, fluffy and beautifully versatile, it’s the perfect base for bold toppings.

This elegant version combines whipped buffalo milk cheese with a generous drizzle of Noosa Black Garlic Honey, crunchy toasted macadamia nuts, and fragrant fresh thyme.

The result is a stunning balance of creamy, sweet, nutty and savoury flavours that feels both indulgent and effortlessly sophisticated.

Serve with toasted baguette and a glass of Pinot Noir for the perfect appetiser or grazing platter centrepiece.


Recipe Details

Serves: 4–6 as an appetiser
Prep time: 10 minutes


Ingredients

  • 250–300 g fresh buffalo cheese (or feta, goat’s cheese or ricotta)

  • Noosa Black Garlic Honey, for drizzling

  • 100 g macadamia nuts

  • Fresh thyme leaves

  • Baguette, sliced and toasted


Method

1. Whip the cheese

Place the cheese into a mixing bowl.

Using a stand mixer or electric beaters, whisk on high speed until the cheese becomes light, smooth and fluffy.


2. Toast the macadamias

Roughly crush the macadamia nuts using a pestle and mortar or rolling pin.

Heat a frying pan over medium heat and toast the nuts until lightly golden and fragrant.

Set aside to cool.


3. Assemble the dish

Spread the whipped cheese onto a serving plate or shallow bowl.

Use the back of a spoon or spatula to create soft swirls across the surface.


4. Add the toppings

Drizzle generously with Noosa Black Garlic Honey.

Scatter over the toasted macadamias and fresh thyme leaves.


5. Serve

Serve immediately with toasted baguette slices for scooping.
