Sweet, Caramelised Root Vegetables with Noosa Black Garlic

Ingredients

Dutch carrots, peeled and tops trimmed

Parsnips, peeled and quartered

1 tbsp butter

1 tbsp Noosa Black Garlic Extra Virgin Olive Oil

100 g Noosa Black Garlic Honey

Fresh sage, finely chopped
Method
1. Preheat the oven
Preheat your oven to 180°C.
A wood-fired oven also works beautifully for this recipe.
2. Roast the vegetables
Place the carrots and parsnips in a roasting tray or cast-iron skillet.
Add the butter and Noosa Black Garlic Extra Virgin Olive Oil, tossing gently to coat the vegetables.
Roast for 25–30 minutes, until the vegetables are tender and lightly golden.
3. Finish with black garlic honey
Remove the tray from the oven.
Drizzle generously with Noosa Black Garlic Honey and sprinkle with the chopped fresh sage.
Toss gently so the warm vegetables become lightly glazed.
Serve
Serve immediately as a warm side dish.
